Bacon grease makes a world of difference.
I go for the non preserved type, or smoked and celery cured. No nitrates/ nitrites.
It's expensive, but goes on sale occasionally.

I preboil the potatoes a little to remove the toxin that causes joint and muscle pain.
In a pan of water, you just cover the spuds, get it up to a rolling boil, turn off heat and leave the lid on until it's cools down. This also helps hydrate them for better fries/ hash browns.

Onions and peppers would go good with this too IMHO.

Safety first:
I had a prayer request a couple weeks ago.
Grease from a pan popped up and hit me right in the eye. The eyeball/ orbit blistered . Thanks to the Lord that I can see and the injury healed incredibly fast.
After that, I keep a wrap around plastic shield hanging from the lock handle of my oven so it's handy and reminds me to use it when I fry. If the lid needs to be left off, a separate fine screen cover keep down the large splatter. It still gets through, but helps.
I recommend those for everyone. Hopefully you'll never need a fire extinguisher, but water can't put out grease fires. A multimillionaire I knew found that out the hard way, so it can happen to anyone. She had third degree burns all over her hands and arms. It was a normal reaction to use water from the sink in a panic.
Anyhow, I don't want to bring anyone down, just be careful with the ounce of prevention and enjoy a good breakfast!

Oh, my! I can't imagine the pain from a blistered eyeball!! Glad that healed quickly for you!

Thank you. I just got back from shopping. Plastic shields are hard to find around here. I asked the pharmacist if he knew where the plastic face Shields were, in his department, to replace the scratched up one and get a couple more for working in my shop.
I'm very grateful that I didn't lose my vision.
The Lord is merciful.

That's my kind of breakfast.

Served every day except Sunday from 7-11:00am.

Wow, this has alot of oil used.
I took the gif from another site, but it caught my attention. If you see this before bed on a Friday, it makes you look forward to waking up early Saturday morning.

That is definitely more oil/ fat than necessary, but you have to have extra for such a big pan. I can tell that all didn't come from the little bit of bacon, but there's nothing wrong with animal fat if using a good non-preserved source IMHO. (No nitrates/nitrites)
When I use cooking oil, it's usually coconut oil because it doesn't change to a harmful substance at medium+ heat.
I use more fat for health reasons and my circulation is good.

Grits, 2 eggs over easy, 2 thick slices of bacon and Mama's buttermilk biscuits. Served with a cup of hot coffee and sides of homemade butter and jelly.

Since you mentioned that, tomorrow morning I now plan to use hominy in a good recipe. I've been saving it for a special occasion.

I cant really handle a cooked breakfast first thing in the morning unless it is more of a brunch closer to lunch. I prefer cereal or toast for breakfast with a cup of tea. Coffee comes later lol.

That looks so good. That looks like french toast. Hope I can attend the fall Springs Festival this year. They have a family Maple syrup producer that makes the best.

My Aunt Mary brought back from England an assortment of tins with loose leaf teas of all kinds from this company. Best tea by far in my life!

English breakfast tea is one of my favorites.
This morning was mocha. Black coffee with a side of organic semisweet chocolate on the side. It was a gift from the Lord last trip to the store.

I'm well stocked with green and various herbal teas. They improve the taste of my daily ginkgo Biloba. It doesn't taste bad. It just doesn't have the good flavors of the herbal mixes.. It's almost time to harvest some

I love Chai. I've even made my own blend.
I'm set for coffee right now. I was talking to the Lord one morning after watching the news. They said that the price of coffee might triple in price due to world market, etc. I shared my concerns with God and forgot about it. I went to the store that day and guess what I found? All of the high end gormet coffees, organic, we're on clearance for a fraction the price! These were the varieties that were my favorites too! I'm well stocked for the year.
The MTC oil was likewise a gift and none was close to expiration date. I'm enjoying some now. God is so good.
