I have always been fascinated by Christians who feel compelled to Keep the Sabbath. Why I find it fascinating is that those who choose to follow that 1 Torah law also reject obeying all the rest of the Torah.
The Christian tradition of keep Sabbath continued in Jerusalem for a few decades after the resurrection. However, Jerusalem was destroyed in 70 AD. The historian Josephus said 1 million Jews were killed, but scholars think it was more like 500,000. More importantly to the question of Sabbath keeping, virtually all Jewish priests were exterminated at that time. Thus there was nobody to left to conduct the Sabbath ordenances. The Jews in the diaspora did keep the Sabbath and for a while even had Roman protection for the practice. Later, under Emperor Constantine, Jews were strictly prohibited from seeking converts or circumcising non-Jewish or Christian slaves, with violations resulting in heavy legal penalties or freedom for the slave. He also helped set that "official" date of Easter during the Council of Nicea, removing Jewish control over their Passover dating control.
Ignatius of Antioch wrote around A.D. 106 that Christians were "no longer observing the Sabbath, but living in the observance of the Lord's day". Justin Martyr documented common Sunday assemblies around A.D. 155–157. The Didache which is dated between 60 AD and 100 AD describes Christian practice focused on only the Lord's Day - the 1st day of the week. So the transition from the Hebrew Sabbath to the Lord's Day for Christian assembly and worship was firmly in place very early in Christian history.
So, I have always found the claim for Torah compliance for the Sabbath strange as nobody supporting this position also demands that witches must be killed, or that if a man refuses to take his dead brother's wife as his own and raise up children with her, he will be killed by God was already recorded in the Torah. The same folks who demand Torah compliant Sabbath keeping reject the equal requirement for keeping the feast days including those only practiced in Jerusalem.
Many skip over the Torah and rely on just the part of the Torah related to the Genesis Creation Story. I assume they know that the Genesis creation story was written and edited sometime after 800 BC by Jewish writers and editors as literary Hebrew did not exist until around then. The people on the ground in both Israel and Judah knew nothing about it as there is no evidence they even knew there was such thing as the Torah. Literacy was miniscule in the population. However, the King Josiah's (640-609) court in Jerusalem did "suddenly" discover the Book of Deuteronomy and established along with a command in Exodus to keep the Sabbath Holy but more importantly, all worship was restricted to Jerusalem. The Prophet Jeremiah lived during a tumultuous period in Judah's history, spanning from approximately 627 to 586 BCE. His observation about theology of the people was, "They have as many gods as they have towns." Thus even monotheism was uncommon, however the worship of YAHWEH as the primary God along with his wife Asherah were more widely known and worshipped in the earliest days of Israel. General knowledge of the Torah started with the development of the Synagogue system around 250 BC and this is when the population of Juda and Samaria began to live out the dictates of the Torah in day to day lives.

Not all of them. But some want to keep the Sabbath because some people have a need for something tangible and immediate that they can see and touch to feel they have done something good to have the approval with God. It is like an adult version of being good, so Santa will bring you presents.
If someone wants to take off Saturdays as a personal day of rest? Then fine with it.
But, if they start judging others who do not? Then it is wrong.

I see a logic to your theology. However, my alarm bells go off when theology rests on one and only one definition of proof text. Let's look at the full context of your Matthew 3 reference
John the Baptist speaking:
11“I baptize you with water, for repentance, but the one coming after me is more powerful than I am – I am not worthy to carry his sandals. He will baptize you with the Holy Spirit and fire. 12His winnowing fork is in his hand, and he will clean out his threshing floor and will gather his wheat into the storehouse, but the chaff he will burn up with inextinguishable fire.”
So the kind of fire described by John will result is the burning of the chaff from the wheat which is always a reference to the events surrounding the return of Jesus.
We have one and only one other reference to "fire" in the Gospel story. That was on the day of Pentecost when Peter and the other apostles spoke to gathered audience. There the "fire" was seen as something over their heads. When the crowd asked what they needed to do to be saved, they were told to repent and be baptised (in water) for the forgiveness of their sins. They were not told to expect to be baptised by the Holy Spirit. Later water baptisms include the guarantee that you will also receive the gift of the Holy Spirit Who is described as a comforter - in their afflictions/persecutions - as as one who will help guide them in righteous living.
Jesus goes on to inform us that the baptism of the Holy Spirit makes a sound one can hear, we don't know where it comes from or where it is going.

The power is Given and the the powers THEY dont want give up .
so you dont have a division really .they make it look like political type of division. Love your God with all your strength and all your heart and all your soul and love your neighbor as yourself. This is the summation of Torah. Everything else is preference. I have come to believe it is just that simple in spite of our best efforts.
There is absolutely no question one can find individuals commenting on both sides of the fence regarding the keeping of the Sabbath. They may even produce some strong comments about when and where and why they saw no one continuing to honor it - for whatever reason - whether by force or not. But that isn't the point, IMV. The only one who gets a vote on this is God. Doesn't matter how many commentaries, history books, whatever can be compiled since the time of the cross, Jesus has told us to believe in Him and obey His commandments.... to me, case closed. And the Sabbath (not sabbaths), is within His 10 commandments - and they are certainly not done away with.
But nowhere was it mandated for the Church age.
The mandates from the law went out along with circumcision.
Yet, many still prefer to have babies circumcised for personal reasons.
