Beef Stroganoff

Ingredients:
500g Fillet of Beef, tail end
50g Butter
Shallots, finely chopped
3 dl Sour Cream
Squeeze of Lemon
Chopped Parsley
Method:
- Cut the beef fillets into strips of approx 5cm long by 1cm square
- Heat in a heavy frying pan, season the beef and add to the butter just as it begins to turn brown. Fry quickly to colour, tossing over and over and keep slightly underdone. Remove the beef and keep on one side.
- Add the shallots to the remaining fat and cook without colour then drain off the fat. Add the cream and reduce to a light coating consistency. Adjust the seasoning as necessary plus a touch of cayenne and finish with a good squeeze of lemon juice.
- Add the beef and any juices to the sauce. Mix in carefully, reheat but do not boil. Serve in an earthenware dish, sprinkled with chopped parsley for garnish.
This is a well loved recipe of mine as my fathers property is famous for it's beef. A well loved Australian Recipe!!
