Ok so I decided to add another recipe to this forum. I chose this Carrot Cake recipe I found online because it's really good. People seem to really love it and I usually get the "It's the best carrot cake I've ever tasted" comments from them.. sooooooooo here it is..

If you want to add nuts to it you can..also glace cherries and raisins are another good idea.. I usually add raisins to mine.. Anyways..hope you like it :3

Carrot cake
(
nutless and no pineapple)


Ingredients

2 cups sugar
2 tsp. baking soda
1 cup Crisco oil (vegetable or Canola)
3 cups packed grated carrots
2 cups flour
1 tsp. salt
4 eggs
2 tsp. cinnamon

Beat sugar and eggs. Add dry ingredients and carrots. Add oil; mix well. Bake in a greased and floured 9×13″ pan at 350 *F for 1 hour, until toothpick comes out clean.

Cream Cheese Icing


8 oz softened cream cheese (room temp)
2 cups icing sugar
1/2 cup butter
2 tsp. vanilla
Beat until smooth and then ice cooled carrot cake.

I just made a carrotcake with similar recipe.
Only has 2 eggs though and half a teaspoon of ginger and I finely grate the carrots on the finest grater and also finely chopped almonds.and icing has few drops of lime in it.

Maybe try this one some day also.

Carrot cakes are marvelous thingz indeed. :)
