This recipe is always a winner at parties and BBQ's and best of all... IT'S EASY!

INGREDIENTS:

125g melted butter
1 cup firmly packed brown sugar
1 egg, lightly beaten
1 tsp vanilla extract
1/2 cup plain flour
1/4 cup self raising flour
2 tbs cocoa powder
1/2 cup desiccated coconut
1 tbs desiccated coconut (extra for sprinkling)

CHOCOLATE ICING INGREDIENTS:

1 cup icing sugar mixture
2 tbs cocoa powder
10g melted butter
1 1/2 tbs hot water (approximately)


METHOD: (for slice)


1. Preheat oven to moderate(180-190 C or 350-375 F gas mark 4-5). Grease a 19cmx29cm rectangular slice pan and line with non-stick baking paper. Allow enough paper to have about 2cm extending above edge of pan all the way around.

2. In a medium bowl, combine the sugar, egg and vanilla extract. Sift together flours in a separate bowl, then stir into mixture. Add cocoa powder and coconut and mix until thoroughly combined.

3. Spread mixture evenly over base of prepared pan.

4. Bake in moderate oven about 30 minutes -or until just firm.

5. Meanwhile- prepare chocolate icing (see directions below)

6. Spread icing over HOT slice and sprinkle with extra coconut. Allow to cool in pan before cutting into bite-sized slices.


METHOD: (for icing)

Sift together icing sugar and cocoa powder into a medium bowl; add combined butter and water and mix until icing is of a spreadable consistency.

ENJOY!

Take a Rubber Spoon and "beat lightly?"
