This is a pretty standard hummus recipe...

(I really enjoy cooking "from scratch", but feel free to substitute canned things for fresh, but fresh really does taste better!)

1 1/2 cups of dried chickpeas
2-4 cloves of garlic, crushed (more or less depending on taste)
4-8 tablespoons fresh lemon juice
2-3 tablespoons Tahini (Sesame seed paste)
2-3 tablespoons olive oil
Dash of cumin

-Overnight, soak about 1 1/2 cups of chickpeas with a pinch of salt. Next morning rinse and drain.
-Cook the beans in some slightly salted water until they are soft. (1 hour, more or less) (You may reserve some of the water if the hummus is too dry in the blender)
-Drain the beans and add to blender. Add crushed garlic, lemon juice, tahini , cumin and olive oil. Blend until it is the consistency you desire. Some like it smooth, some like it chunky. Play around with it until you get what you like!

I like to take that recipe and tweak it a bit for my own personal tastes. I love vinegar. The more sour the better, so I add in 2 tablespoons of white or rice vinegar. I also sometimes omit the tahini. Some would consider this to be hummus abuse! Enjoy!

I make hummus pretty frequently. It always tastes better than the store bought stuff.

1. I put most of my seasonings (salt, pepper, cayenne, ground caraway seed, dill, cumin, lemon zest, feta cheese, olive oil, and probably some o therstuff that I don't remember right now) on top!! So, you have a huge layer of pure taste that hits your tongue, and then it mixes together in your mouth! :D

Feta makes it more salty, so be careful how much you add :)

2. Try zesting a lemon, and adding it (the zest).

For some rosted red bell pepper hummus just roast a red pepper in the oven for 10-15 minutes covered in a bit of olive oil at 350 degrees. You can also roast garlic with it to give the garlic a more mild taste, just cut off the tips and pour some olive oil over top. After roasting you should just be able to squeeze the cloves right out of the bulb.

TIP: (never substitute tahini with peanut butter) I had tried this once when I didn't have tahini and it tasted terrible!!!

Yeah, I wanted to make hummus one day and didn't have tahini, but had all of the other ingredients and remembered I had read somewhere on the internet that peanut butter could be used as a substitute. After trying it for myself I decided otherwise lol.
