3-4 Ripe Plantains (golden with black spots)
2 cinnamon sticks
1/2 cup or less of Brown Sugar
1/2 cup of cranberry juice (100% juice not cocktail)

Cut the ends off the Plantains and peel em then cut the plantains into slices.
Plantain slices and the other ingredients go into a skillet and you stir it well as you bring it all to a boil.
As soon as it reaches a boil you reduce the heat to a simmer and let the mixture simmer for 2 hours, You want to stir the Plantains every 20-30 minutes to get an even Caramelization.

Extremely easy to cook, and delicious served hot.
