London broil roast , 1 whole yellow onion chopped, Mushrooms halved, baby red potatoes, 4c. of strong coffee, 2 bay leaves, 1T. dried garlic, 2 tsp. salt, 1T. black pepper, 1 tsp basil,1 tsp paprika , 1/2 thyme , 1 tsp rosemary, 2 T. beef Orrington broth base, olive oil ,and 3 T. corn starch.
In a skillet add olive oil to cover the bottom of skillet. Then add a little of all the spices except the bay leaves. Once oil has heated up add the roast, sear on all sides. Then place in crockpot and add coffee and veggies then all other ingredients , except cornstarch. Cook til tender. Then in a small dish mix cornstarch with enough water to dilute it then add to crockpot and mix. Let sit will thicken the gravy.

Is that 4 cups coffee and if so, what taste difference does the coffee offer? It does look compelling, lol.

I was a little leary of making it at first. But have to say it is really good. Preferred at our house over just regular gravy. Perhaps the caffeine in it gives it the kicker,lol!

Hi, yeah im interested to know like above. Can you taste the actual coffee in it!?
Never heard of a recipe like stew with coffee in it before.

Red eye gravy. Here in the old south, when it came to food, we wasted nothing, and the well was about a 100 feet from the kitchen door. Bacon, ham, fatback, or any other fried salt cured pork drippings (fat left behind after frying), a handful of flour (usually leftover from making biscuits) and the boiled coffee dregs (left over after grounds were use two or three times) were the main ingredients. After frying the pork, while the drippings are still hot, sprinkle flour over them, and stir until smooth. Pour your hot coffee dregs over the still hot flour/drippings and stir until you have a thin gravy. Serve over biscuits.

It gets its name from red eye form by the solids that settle out of the grease.

Caution. Unless you like a little grit in your gravy, strain the grounds out of your coffee before using the coffee. They made great food for the worm bed.
