I tried a dutch tutorial, but I get confused by when letters change and not (like when the u sounds like u and when it sounds like a y)

yes. ie = like ea in sea.

Not odd. Logic. a = short; aa = long.

o = short, oo = long.

But.... double vowel only if the syllable is closed. Boom (tree). Bomen (trees) is also long o, but we write only 1 because the first syllable is open.

If it ends with a vowel, it's open.

Boom - closed
Bomen ==> Bo (open) - men (closed)
Astrid ==> As (closed) - trid (closed)
