Fruit and vegetables are the source of most of the body's basic nutritional needs. We are told that we need at least six servings per day.

My question is two fold. Can we meet our daily nutritional needs with dehydrated fruit and vegetables and if so, how much do we need to take?

In some cases, the nutritional value is increased with drying, such as the case with apricots :)
