Quality vs quantity
Quantity refers to a numerical value of a thing, and often represents something concrete.
Quality usually refers to an attribute of a thing, and often represents something abstract, and it may therefore be impossible to measure.

Chickens.
1. The quantity of my chickens is THREE. (I have less than 4 and more than 2.)
2. The quality of my chickens is GOOD. (This could refer to almost anything, and it may not be anything we can measure.)

It's probably more accurate to say quantity refers to the numerical value of a "grouping" of things.

Is this a reference to quality versus quantity, and the correct category for the term beauty?

Or is this a question about the meaning of an attribute of God called his beauty?

I like that
Quantity is basically a abundance of something either high or low
Quality is basically a value of something high or low.

in the physical sometimes it can be and sometimes it can’t depending on the measuring device used I assume.

if its just merely observation from human perspective then the eggs are still being measured by a measuring device I think would be the eyes to mind or by touch by hand to mind

God's beauty.

That isn't an attribute of God's nature which is normally discussed in doctrinal theology.
The answer is going to be something a bit vague unless scripture says something specific about it.

We could start with more Bible study, and see if the scripture says anything specific.
