Lynn, Red Velvet cake is a southern dessert. It is a chocolate cake made from cocoa rather than chocolate. The cocoa is dyed red. The frosting is made from cream cheese. The cake is not cloyingly sweet as it is made from cocoa instead of chocolate. Also, the cream cheese frosting adds tang. It is a dense cake and if well made, can be dry.

If you saw the movie Steele Magnolias, the groom’s cake was an oppossum, that when cut was red inside. It started a craze for red velvet groom’s cakes in the early 1990s in the South.
