I have not eaten meat in years there was a time I was vegan.
But then I started back the dairy and the eggs and the fish as it was difficult to find things to eat.
But before returning to these things I used tofu the soft and firm.
Soft tofu - you can season it with onions add tomatos, sweet peppers etc and you can cook that like scrambled egg, you can also blend this up with vinegar etc and make a salad dressing, you can also use this in cake or other desserts.
Firm tofu - this you can season up like you would meat and you can cook it as such but what Ive loved to do is to bake it the texture is like meat seriously well more like chicken.
I have made eggless cakes, eggless muffins, eggless pancakes.
There is also a thing called foo chook (dried soya bean curd) it can be soaked and Ive heard can be fried like bacon Ive only seen it done this way I usually eat it with vegetables or in a soup.
If you are not a fan of soya or prefer not to use it you can use legumes.
I have made meat balls using lentil and chickpeas. I soaked and grounded them both. Added crumbs and seasonings and I rolled into balls and baked them. The texture was like meat
