Because He had to be resurrected some time on the day of the Feast of Firstfruits.

-Saturday sabbath (just so happens to fall after this particular Passover)

Wrong. Those are 24 hour days.....evening and morning. Not day like daylight.....
We DO NOT KNOW the exact hour of His resurrection from the tomb. But it definitely was before the dawning of Sunday, before Mary and the women arrived.
Odds are.....it was during the night. For lots of reasons.
Yet "this jerk" knows EXACTLY the significance the day after the Sabbath after Passover aka the Feast of Firstfruits. And how this relates to the resurrection.
Oh well......such is the advantage of "spending weekends" studying these matters......
Scriptures tell us that Yashua/Jesus would be in the heart of the earth for 3 days and 3 nights. (We must keep in mind that God’s created day begins at sundown and completes at sunset.) Scriptures also tell us He died on the Passover. This begins the 3 day, 3 night clock. God’s commanded feasts tell us that following Passover is the Feast of Unleavened bread. The 1st day of this feast is a High Holy Day (a special Sabbath). Yashua/Jesus died on Passover and His body taken down before sunset (the commencing of the High Holy Day Sabbath) and buried. He rose on the 3rd day (just prior to sundown, the weekly Sabbath) and was seen by the woman at dawn of the 1st day of the week (Sunday, which commences Saturday evening at sundown, following the Sabbath). Thursday and Saturday Sabbaths. Wednesday sundown - Saturday sundown, 3 days, 3 nights.
Mary and the women COULD have arrived during the darkness BEFORE the dawn of morning (very early), because the Saturday Sabbath had ENDED at sunset the day before. They also woild have had enough time to prepare spices, if they worked (our) Saturday night, got a little shuteye, and left very early to the tomb, probably just as the sky was barely lightening.Wrong. Those are 24 hour days.....evening and morning. Not day like daylight.....

They could not travel between sunset Friday and sunset Saturday, the Jewish weekly Sabbath.
The point is......Jesus was resurrected AFTER the Saturday sabbath had ended, on the NEXT DAY (sunset was past, evening had begun) which was the Feast of Firstfruits. Undoubtedly AT NIGHT, before Mary arrived very early in the morning.
Jesus was resurrected at night. No doubt.
I do hold out the possibility that it WAS three whole days and nights. Definitely possible.
But many scholars say that this theory (three full days and nights) is not absolutely necessary. Partial days meaning full days is also possible.

Yes, it refers to the feast of weeks, and the many sabbaths that begun to be counted since Firstfruits. Lev. 23:15-22.
Thus that 'first [day] of the week' was actually the first day to begin counting the 7 sabbaths unto Pentecost (Shavuot / Weeks).
The translators, made it simplified ('first [day] of the week", which it was in technicality), so as not to bring confusion, but people, in their stubborness, make their own confusion from their own selves.
The Unleavened bread feast sabbath and 7th day sabbath were over the previous day, but there was another feast sabbath that would take place the following week, upon the 6th day, ending the feast of unleavened bread (Lev. 23:7-8).
1Co_15:20 But now is Christ risen from the dead, and become the firstfruits of them that slept.
1Co_15:23 But every man in his own order: Christ the firstfruits; afterward they that are Christ's at his coming.
