It's really simple, the first 8 hours of the day you eat next to nothing and the other half of the day you eat whatever you want. On this diet most calories I can eat in the time frame is enough to weigh 210 pounds. I lost 40 pounds and kept it off, been doing this for a whole year and I feel great. It works because you get used to hunger.

Sounds good! I looked up if type 2 diabetic people can fast and the quick answer is yes! Just like what you said - 8 hours is a good length of time to fast. I just have to check with my doctor first. I want to see if I can reverse the diabetes while I still can....

This is called intermittent fasting. It helps the body to get into ketosis and burn fat.
There are a number of variations on the theme.

I agree with replacing the above with most things on you list. The only things on your list I would avoid are eggs and dairy as I am getting good nutrition from the other things I am eating. I love that you have Chamamile tea on your list as this is something I have been thinking about trying. I'll be getting a blender and then I will try make smoothies. I like do oatmeal and bananas. I have used some tree seeds in cooking.
