Hey everyone,

I’m looking to shake up my weeknight dinner routine and would love to hear your favorite meat-based recipes. I usually stick to chicken or ground beef, but I’m open to trying pork, lamb, or anything else that’s not too complicated or time-consuming.

Bonus points if it can be made in under an hour or prepped in advance!

Do you have any go-to dishes that are both flavorful and easy to make?

I would really appreciate any recipes, tips, or seasoning ideas to help bring some variety to my meals.

I found a recipe for pull pork that I now use as my default application, especially to my grandguy dinner guest's reaction to his first bite of it. You can use apply it to pork shoulder or butt, and I use it on loins also.

Here's the rub:
1Tbsp brown sugar
1 Tbsp chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp black pepper
1 tsp kosher salt

Coat the meat with the rub then heat up a Dutch oven and sear the roast with 2 Tbsp of oil then add a 12oz can of Coca Cola and set it in the oven to be ready in time for dinner.

I found a recipe for pull pork that I now use as my default application, especially to my grandguy dinner guest's reaction to his first bite of it. You can use apply it to pork shoulder or butt, and I use it on loins also.

Here's the rub:
1Tbsp brown sugar
1 Tbsp chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp black pepper
1 tsp kosher salt

Coat the meat with the rub then heat up a Dutch oven and sear the roast with 2 Tbsp of oil then add a 12oz can of Coca Cola and set it in the oven to be ready in time for dinner.
Oh, and the recipe is good on ribs also.
When the ribs have cooked to just about done, remove the cover (whether it's a lid or foil-I should have specified earlier to cover and set in oven)
then dab the meat generously with BBQ sauce and cook uncovered the remaining time in order to caramelize the BBQ.

chicken is not beef, it's poultry! hahaha, joking. for summer time, because my wife & i are tremendously busy during the week, we just eat simple meat dinners which is cheeseburgers or kayem hot dogs. i will put smoked salmon on a burger once in a while. too, try a tartar or ranch dressing on a hamburger.

A really easy meal is a kielbasa casserole, although you could certainly skip the sausage and use chicken thighs or drumsticks instead. Cut up carrots, potatoes, and onions and coat in oil and your favorite seasonings. I like to use onion powder, salt, pepper, and a touch of garlic powder, and if I'm really festive I'll put on some Italian seasoning. Add in the cut up kielbasa and bake covered in foil for around 45 minutes at 400. The cook time will depend on the size of your vegetables. Feel free to add in other vegetables too, like green beans, I've seen that done a lot.

Crock pot pork chops are nice too. Add four pork chops to a crock pot and drizzle olive oil over them. Add in about a cup of chicken broth, minced garlic, paprika, Italian seasoning, salt, pepper. Mix it around and cook on low for 6 hours.

I found a new sloppy joe recipe and have made it twice already, it's delicious! But, it's not the healthiest...you can definitely cut back on the sugar.
Brown 1 lb of hamburger. The recipe doesn't call for this, but I add in a chopped onion and bell pepper. As they're cooking mix together 1 cup of ketchup, 1.5 tsp of mustard, 1 tbsp of worcestershire sauce, 1 tbsp of onion powder, 1 tbsp of garlic powder, 1/4 cup of sugar. Once the meat is browned add in the sauce and heat. Serve on buns or toast or whatever you like!

Seer whatever number of pork chops you want to cook. They're very good reheated for leftovers. Put in a covered dish in the oven at lowest oven heat or in a crockpot, add a can of golden mushroom soup and sprinkle in some rosemary and cook all day. Easy peasy, delicious, and healthy. If you're around while they're cooking, turn them over once.
