My guess is this isn't exactly what you're looking for, but it is a cover of the song, nonetheless.

By the way, your title and your post don't seem to go together.

Sufjan Stephens' version is nice, soft & folksy.

Mumford & Sons plays it too, according to Sufjan's arrangement.

the David Crowder band plays it, but in my opinion his version is over-produced. i like the more 'raw' or 'simplified' way that these two versions sound; to me i just hear more emotion and and sincerity in it than i do with the slick sound quality and all the levels of instrumentation in Crowder's recording.

for several years i build pipe organs for a living. there was a guy i worked with, who was a trained organist, and whenever i had him sitting down at a console ((because he always wanted to play)) i'd ask him to play some Liszt. after he gave me a dirty look ((that's a joke only pianists & organists will get)), the two hymns i almost always asked him to play were 'come thou fount of every blessing' and 'a mighty fortress is our God'

i am terrible at picking favorites. i generally refuse to. but perhaps my favorite is ((my friend)) Isaac playing it for for basically me, alone, to hear, in the middle of some grand cathedral on some million dollar instrument we'd just installed and tuned, sitting in the middle of the empty pews of the dimly-lit sanctuary. because he wasn't really playing it for me, he was playing it for Christ; he'd ask what i wanted him to play because he wanted to be a servant to me, and he knew i'd ask for a hymn to glorify Him. those were concerts that deserved a lot more ears than mine :)

Ryan Clark from Demon Hunter and Mac Powell from Third Day are my two favorites.
