Goulash (Mexican Style)
1 lb. lean ground beef
1 cup chopped onion
1 (14.5 oz) can diced tomatoes, undrained
1 (8 oz) can tomato sauce
1 cup corn
½ cup water
1 ¼ teaspoon chili powder
1 teaspoon dried oregano
½ teaspoon salt
2/3 cup uncooked elbow macaroni
2/3 cup shredded cheddar cheese
In a large nonstick skillet, cook beef & onion over medium
heat until meat is no longer pink; drain. Stir in the tomatoes,
tomato sauce, corn, water, chili powder, oregano & salt.
Bring to a boil. Add macaroni. Reduce heat; cover & simmer
for 20-25 min. or until macaroni is tender. Sprinkle with
cheese, cover and cook 2-3 min longer or until cheese is
melted. Ready in approx 35 min. Servings: 5
Adjust onion amount to your desire. I probably only use 1/4 cup
I only use 1 tsp. of the chili powder
A tasty, speedy good one-pot dish dinner!
Much much better than the "box hamburger helpers" lol...
