Inflammation is typically a protective reaction within tissues in response to harmful stimuli most commonly foods we ingest, injury, infection, or chemical irritants. The process in large part aids the immune system and it's ability to clear the stimulus.
Oxidation is one half of the redox chemical reaction process. These are chemical reactions where the oxidation number of the reactants is changed. Namely oxidation is the process of loss of electrons and reduction is the process of gaining a reaction. Hence in a redox reaction involves an exchange of electrons between the reactants which drives the chemical reaction. The canonical oxidising agent is oxygen (hence the name) and it can take part in a large number of redox reactions (such as forming rust).
Neither of these are specifically linked to one another in some wider general sense. Oxidants can't be said to "cause inflammation" in some blanket sense. And causes of inflammation are not oxidizing chemicals. And it is worth noting that cells are engaged in a vast number of redox reactions all the time, in the process of being alive . So there are no useful catch-all statements to be made about the inter-relation of inflammation and oxidation.
That said, Oxidative stress is an issue for living cells. Many, many biological processes produce Reactive Oxygen Species (ROS) and in sufficient concentration these will cause cell damage and in turn tissue damage/inflammation. As a consequence as cells produce or encounter ROS they also have mechanisms for handling and detoxifying these. In our case ROS arise largely as a result of the oxygen we breath. There is much info about the exogenous and endogenous sources of ROS.
Of course there are likely other oxidative chemicals in the foods we eat. Some modern science points to disease beginning in the stomach; due to many factors, but oxidation, inflammation, and fermentation being the major issues. Inflammation of the stomach and bowel is is commonly caused by the protein or sugar content of your diet.
Worth noting that the immune system uses ROS as an anti-microbial defense. There here we see a direct link between inflammation and oxidation; inflammation causes white blood cells to gather at a site of injury and then white blood cells utilize ROS to kill off any microbes.
Simply stated, foods that cause oxidation and inflammation over time degrade the bodies ability to function at levels to maintain sustainable health.
These, combined with foods that are acidic, foods that are counter to higher aerobic activity in the body, foods that dump unhealthy chemicals into out bloodstreams, are a major cause of accelerating the aging process of our bodies and disease.
Our bodies don't heal by eating good foods in the morning, and then junk foods at night. All that does is somewhat slow down the rate of damage. Our bodies move into a state of biological healing by themselves by consistently eating good foods that are defined more by what we leave out as opposed to what we eat.
