Is it Gossip to Criticize Pastors and Leaders?

I think that it's important to note that gossip implies a malicious intent to defame, slander, or spread libel (depending on the medium being used). To discuss the false doctrine or prophecy of a pastor, teacher, or prophet (Biblical appointments - 5 fold ministry in Hebrews) in a means to warn other Christians is not gossip. It is dealing with straight facts regarding what the individual taught or said and comparing it to scripture. In fact, not warning would be a demonstration of a LACK of love on the part of a believer to another person.

How does the Bible define or talk about gossip, and is it gossip to criticize Pastors and Leaders?

We are not supposed to gossip. When pastors or leaders are damaging the spiritual welfare of a church, someone should stand up and criticize them.

3 John 1:9-10 (KJV)
9 I wrote unto the church: but Diotrephes, who loveth to have the preeminence among them, receiveth us not.
10 Wherefore, if I come, I will remember his deeds which he doeth, prating against us with malicious words: and not content therewith, neither doth he himself receive the brethren, and forbiddeth them that would, and casteth them out of the church.

If you criticize their doctrine it is not gossip as that would be common knowledge...but still, you should confront them if it's a serious deviation.
To criticize their character or family behind their back is gossip.
