3-4 skinless boneless chicken breasts
1 TB butter
1 can MILD Rotel tomatoes
1 can cream of chicken soup
1 can cream of mushroom soup
¼ cup chopped onion
¼ cup chopped bell pepper
8 oz grated cheddar cheese
Tortilla chips (or flour tortilla pieces)
In skillet, melt 1 TB butter & cook chicken thoroughly,
adding chopped onion & bell pepper before done. Add
Rotel & soups & simmer just a few minutes to mix.
In casserole dish layer the chips or tortilla pieces, chicken,
cheese, and soup mixture. Top with desired amount of
cheese. Bake at 350 degrees for about 25-30 min.
