I'm considering accessibility too though. Not everyone has room for a chicken coop or knows about all that's required to raise chickens. How are people who live in apartment buildings going to raise chickens? I suppose they can keep the chicken coop on the roof, but it can easily be vandalized and/or the chickens/eggs stolen, plus they'll need the permission of the landlord/owner.
With tofu, anyone can make it and it only requires a few ingredients and tools that can be easily acquired.
Tempah is another option. Here's a recipe for it. You can use any type of beans that are available to you, so it's very accessible! I used to babysit for a pesca-vegan and she'd make enough food for me and her son. I really like vegan food because of her! Everything she made tasted good even if it was mostly vegetables.
