I've been plant based for almost two decades and it took me a lot to learn how to truly eat healthy. Hope these tips help.
1. Eat whole foods. My saying is if God created it then is safe, if a lab created then stay away
2. Fruits and veggies aren't the only option, don't forget legumes, herbs, nuts, grains, mushrooms, seeds
3. Organization and variety will make things easier. If you have all your food nicely sorted organize in your fridge and counter is more appetizing, instead of bagged up in the fridge. Even putting you things like your oranges and bananas out in a nice big pretty bowl really tricks the mind to gravitate towards fruit for a snack instead for a bag of chips hidden in the pantry.
4. Don't bring items home if you don't want to eat them. Once they are in your kitchen there is no way you will have the will power to refrain from them
5. Don't be afraid to eat a pizza or mac and cheese or a donut if you feel like it
My easy to go fulfilling vegan meals
1. Oatmeal with peanut butter, bananas, raisins, and fruits (I have mixed frozen fruit I throw in)
2. Tacos or tostadas filled with lettuce, onions, tomatos, avocados, beans
3. Quinoa and I just throw a bag in of frozen mixed chopped veggies
