Matthew 26:28 (KJV) For this is my blood of the new testament, which is shed for many for the remission of sins.
Hebrews 9:22 (KJV) And almost all things are by the law purged with blood; and without shedding of blood is no remission.

Is the correct understanding from these verses that Jesus died on the cross so that our sins could be forgiven the same as when animals were sacrificed in Old Testament times so that sins could be forgiven (I don't actually know if this is true about animal sacrifices though)? If so, are we forgiven just by believing that Jesus died on the cross so that our sins could be forgiven and is that how someone is saved?

Excellent observation. All those Old Testament sacrifices were a type, shadow or illustration of what it would take for us to be reconciled to God and be saved - a perfect substitute to die in our place. Yet, as to these animal sacrifices it is written,

“For it is impossible for the blood of bulls and goats to take away sins.” Hebrews 10:4

But, we further read…

“Behold, the Lamb of God, who takes away the sin of the world!” John 1:29

“And by that will we have been sanctified through the offering of the body of Jesus Christ once for all.” Hebrews 10:10

Jesus was the one all those sacrifices were pointing to. He was the sinless sacrifice - the perfect sacrifice. Therefore we read..

“All have sinned and fall short of the glory of God, and are justified by his grace as a gift, through the redemption that is in Christ Jesus, whom God put forward as a propitiation by his blood, to be received by faith.” Romans 3:22-25

Yes, it is how one is saved. It is a personal thing - we believe that Jesus was MY substitute. All my sin (past, present, future) was counted to Him. He bore the wrath of God for them. He died in my place. I count on it. I place my confidence in Jesus to save me by what He alone has done for me, apart from anything on my part. In turn, His righteousness is credited to me, making me forever accessible before the holy God. Indeed, the very moment I place my faith in Him, He gives me ETERNAL life!

“I write these things to you who believe in the name of the Son of God, that you may know that you have eternal life.” 1 John 5:13

The new life begins in belief to God, Son Jesus is alive, raised from the dead for us to be given new life in his risen Life, given to us by Father alone reveals Son's life giving Spirit for us to be new and dead to first birth willingly, not having to, choosing to, at least for me presently.
Understanding the death had to happen first, once for us all to be reconciled (2 Cor 5:17-20) (John 1:29)
Then new life is now offered inn the risen Messiah, Jesus Christ the only perfect flesh to ever walk this earth to this day and forever for us to be adopted in by Belief to this done work, works, once for everyone that stands in belief, it is done (John 19:30) that had to happen first
Read that in Acts 1 after risen when he said this to the disciples, that he had to go there first to reconcile us all to himself in not counting anymore sin against anyone. (Col 1 and 2)
When you, I or anyone else sets out to try to do law, one gets to see they can't do law perfectly as is done first by Son at that cross in his being risen presently and forever on the third day he got counted as dead.
New life given by Father, Daddy, PaPa is in the risen Son for us to walk new in love and mercy to all, not this world's definition of Love, God's definition (1 Cor 13:4-7, 13) that in truth only Father can impute in each child that will not deny God, even in adversities as we see Jesus did not, all the way to that cross willingly, that turned out to be for me and all the world of people born in the similitude of Adam and Eve
Today is the day!!!!!!!!!!!!!!!!!! to choose to believe and stand in the done work of Son for us each personally, between God and you, thank you
God simply loves us all, otherwise that cross would not have ever happened, you think?
