We all love shortbread, and there's a zillion variations out there on the traditional shortbread cookie. I really like this one... it's tried and tested; and easy!!
Ingredients:
2 cups plain flour
1/4 cup desiccated coconut
1/4 cup rice flour
1/4 cup caster sugar
250g butter (at room temperature)
Method:
1. Mix together all dry ingredients in a large bowl.
2. Rub in butter, and work together to form a soft dough.
3. Roll out onto a floured board to approximately 5mm thick.
4. Cut shapes with a cookie-cutter and bake at 180C for 10-15 minutes.
