I'd like to learn to fluently speak a language other than American English.

Spanish, Russian, Mandarin Chinese, American Sign Language, or maybe something else.
 
I would love to open a soup kitchen to feed the needy
I have always wanted to do that :)
 
I'd like to see my family one more time to say goodbye in person.

When I left it was in the middle of the night and I literally sneaked outta town, I said goodbye to my ma and I even seen her since but I never saw my Pop or brother.
 
I would like to be able to minister in a prison or home for the aged, among others.
 
I've thought for years that I would like to provide a shelter for the homeless. A large shelter where anyone could come in out of the cold.
 
Write something good enough to get published. Not that it would necessarily be published, but something good. I have many ideas and characters kicking around in my head. I just have to stop being lazy and get to it.
 
I'd like to learn to play the piano ... but I'm not sure I have the patience for it (or the money, since I'd need someone to push me to do it, which would probably mean paying them for it :p )

and it would be nice if I could get a full time, long- term job where I felt needed.

I want to learn how to play the piano, too. I took lessons as a little girl, but never practiced. That is one of the regrets of my life. :( I actually have a beautiful, old piano that goes unplayed. So I need to get to it. One of my friends plays well, and I thought about hiring her since her children are older and not so much underfoot as when they were small. I can play simple songs with one hand, and I know the keys. I can read music, but that's about it.

Reading the music and getting the keys right are not that hard. I think if you buy a beginner's book, you could probably teach yourself the rudiments of reading music. I don't know if you have a keyboard, but there may be some kind of app to help teach piano. There are apps for everything, it seems. I never got around to learning how to play with both hands. It was like a coordination problem or something. So, I gave up playing, much to my regret as an adult. I wish I could go back in time to my little girl self and say "Don't give up playing the piano!"

I don't think reading music is too difficult at first, as long as you start with easy pieces. Don't feel bad, if little kids can learn to play, we can too!
 
I do have keyboard ... I also rent an apartment, the landlord living upstairs, and there is no soundproofing whatsoever :D
 
Then you can share your new found talents with others for free!
