The term Son of Man relates back to the prophesies in the book of Daniel 7:13-14,
concerning the coming Messiah and the establishment of His eternal kingdom.
“In my vision at night I looked, and there before me was one like a son of man, coming with the clouds of heaven. He approached the Ancient of Days and was led into his presence. He was given authority, glory and sovereign power; all peoples, nations and men of every language worshiped him. His dominion is an everlasting dominion that will not pass away, and his kingdom is one that will never be destroyed.”

Jesus refers to himself a lot of the time as "son of man"
I have always believed it was just re-enforcing his birth in human form by a human mother.

Jesus was assigning the Son of Man prophesy to Himself, essentially letting His audience know that He was the awaited Messiah. It is a term God also used in relation to Ezekiel many times. In relation to Jesus, it means both: He is human, and He is the awaited Messiah

Yes, Jesus was announcing that He was their Kinsman-Redeemer. The Son of God, born of a woman, but God. It was only because the Last Adam was and still is fully God and fully man that He was able to pay the price (for all of humanity's past, present and future sins) and through His great sacrifice be able to restore creation to Himself.

The term is for doctrine, God was in Christ reconciling the world unto Himself. Jesus Christ was a minister of the circumcision for the truth of God, to confirm the promises made unto the fathers. Concerning his Son Jesus Christ our Lord, which was made of the seed of David according to the flesh, (made being an important word there, because the Son was begotten by the Father from the dead).

I should have added the Word was made flesh, even though we all know this. And, it wouldn't hurt to look at Hebrews, a body thou hast prepared for me. I was recently speaking with a friend about the insistence of religious doctrines that want to combine belief that Jesus is God to the gospel and to salvation of the soul, but it's not imperative to holding forth the word of life or the gospel in truth. God is not a theologian. We don't have to defend, discuss, confess trinity doctrine or triune nature, at all. Is Jesus God, of course and the Son of man and the Son of God.

"Son of Man" is a reference to Daniel 7, where the "son of man" approaches God's throne, takes a seat, judges the enemies of God, and takes possession of God's kingdom on earth.
The title "son of man," by itself, does not mean "God." In Daniel 7, the "son of man" is synonymous for the "saints of the most high," which for Daniel would have been Israel. This is given in the interpretation of the dream in 7:15-28. Jesus' use of this title in his trial offers a twist though. In his response to the high priest, "YOU will see the son of man, sitting at the right had of the Power and coming on the clouds of heaven" Jesus (a) identifies himself with the son of man in Daniel 7, and (b) identifies the high priest as an enemy of God who Jesus would judge. Of course, according to passages in the OT (eg, 1 Sam 24:6, 2 Sam 1:14-16, 19:21), the only one qualified to judge God's anointed (be in the king or priest), is God himself. So, the charge is blasphemy; Jesus has claimed a role held only by God.
The title, “the Son of Man” was used by Christ to claim that He was the majestic person referred to in Dan 7v13,14, cf. Mark 14v62, Matt 24v27, 26v64, 10v23, Luke 22v28,29. The title “Son of Man” is found seventy times in the Gospels; it was the name Christ chose to call Himself most by before men. It is obviously a claim to the Messiahship, but it is also obvious that by it Christ was expressing the limitations that He felt through His humanity. Christ suffered exhaustion, hunger, thirst, temptation, grief, and indeed, all the trials of man but the taint of sin. Jesus was truly human as well as truly Divine. He had to learn like every human child, and suffered the normal physical limitations of the body. Matt 8v24, Mark 2v16, 11v12, Luke 2v42-52, 4v2, John 4v6, 19v28, 1Tim 2v5, Heb 2v14, 4v15. The glory of Christ is that He victoriously conquered the World, the flesh and the Devil, in a human body, and against enormous odds accomplished our salvation...
