The rest Jesus offers is to be tethered or yoked to Him. This tells you that the offer is one of relationship, not works. In the relationship, He is the one who supplies the strength. He is, in effect, living His life with us and through us, just as He lived His life in His own body.
This requires us to maintain relationship with Him. Here spiritual disciplines are important. Spiritual disciplines are helpful of themselves, but their real value comes when they actually lead us into the presence of God; for it is in His presence that we are truly changed from glory to glory. For example, we pray. Why? Because when we pray in secret we meet with our Father who is in secret. We fellowship. Why? Because where 2 or more are gathered in His name, He is in the midst of them.
There is a reality to the presence of God. It is real and manifest and experiential. And it is this presence we are to dwell or abide in. And as we do, Christ exercises His power in us.
I personally believe too few Christians come to know this reality. Some because they have never been taught and others because they do not seek it. But this is the rest that Jesus offers: His power at work in us rather than us living as best we can in our own strength.
There are two reasons for this one most of the apostles were Jewish and that is where they could meet in congregate in the inner and outer courts to promote the New Covenant and Christ.
Paul has said to the Jew I become a Jew so that I might reach them and to those under the law I become under the law to reach them
This is not indicative of them promoting keeping the Sabbath remembering that the Jewish people this was their life their history their heritage and it's not forbidden to keep doing it even in the New Covenant or keeping the Mosaic law.

Just because they went through a Sabbath does not mean that they're promoting it to the Gentiles you're reading in to the text of the Bible of theology that has passed that has become obsolete that is fading that being the Mosaic law and the old Covenant
It has never stated that we must keep the Mosaic law and in fact over 40 times Paul explains otherwise if it was such an important thing to keep going especially if it were to apply to the Gentiles it would be clear and concise but we don't see that in the Bible all you can do is point that hey the apostles did it but again they were Jewish and there's nothing wrong with keeping the Mosaic law it's just that it doesn't do anything for you anymore

Why is His mercy/atonement seat so important, because below it is the Ten Commandments, the law that defines what sin is when we break why all Ten of the commandments came with the death penalty the wages of sin is death Rom6:23 His blood covers His law from the sins we commit. Removing the law sadly doesn't remove the penalty of the law, it removes His mercy on what He covers Pro28:13 Exo20:6
The law of Moses was written by Moses it came as a result of sin and was the prescription for sin (animal sacrifices) until the Seed- Christ. Animal sacrifices could never remove the stain of sin why Jesus had to sacrifice Himself for our sins. Heb10:1-18 Animal sacrifices was just a placeholder for Christ and showed us what God is doing in His heavenly Temple on our behalf as our High Priest.
The law of Moses was written by man, was places besides the ark, not inside, not under His mercy seat as a witness against thee as it held all the records for sin and the curses for breaking the law of God the Ten Commandments Deut31:24-26 why it was against man, the Ten Commandments is perfect for converting soul Psa19;7 holy, just and good Rom7:12 how could it not be it was written by God Himself!
I rest everyday in the work that was accomplished by Jesus Christ shedding his blood on the cross do I attend a church certainly on a Sunday and it's not a sin because in Christ Our Sabbath rest is every day this is explicitly pointed out in the Bible

I can't find this as a reason in my Bible. This was Mary who kept the Sabbath after the death of Christ who followed Jesus everywhere, would Jesus not tell her or anyone a change to a commandment? She was the first person to see Him after He rose. Did Jesus correct her or anyone about Sabbath-keeping- of course not because He already promised no edits to the law of God. Psa89:34 Mat5:18-19 and it continues according to Jesus own words Mat24:20 Isa66:23

God invited everyone to serve Him, He told us how, the issue is people want all of His blessings on their terms not God's Isa56:1-2 they want to serve the Lord on their terms, not God's Isa56:6. This was an invitation to join Israel and come under the covenant God made with Israel at Mt. Horeb. You are misappropriating something that was not for you.

The Covenant was not merely the 10 Commandments. Jesus used the expression "the Law and the Prophets", which contains the entirety of the covenant,

4) Ye have seen what I did unto the Egyptians, and how I bare you on eagles' wings, and brought you unto myself.

12) That at that time ye were without Christ, being aliens from the commonwealth of Israel, and strangers from the covenants of promise, having no hope, and without God in the world:
Until Christ came, you could only come to God in covenant relationship by joining Israel.

Not at all because Christ took away that wall of separation had you kept going in the verses you quoted.
