I have also argued that concealed carry is preferable too.

Because Marxists mindset and philosophy has dominated multiple generations making people fearful of anyone with means of protecting their loved ones.
If open carry were common as in a couple of Midwestern states, nobody would bat an eye. A rifle in a restaurant is strange because it's out of context. Anyone doing that would be making a legal or political statement that they are exercising their rights which shall not be infringed. NeoLiberals want to outlaw our ownership of weapons so if someone has a rifle or a knife or a baseball bat, the public must depend upon those who cannnot be depended upon, the communist/ socialist state for all things. An armed public who sees something out of ordinary, like a hunting rifle, will be able to police their own location and keep an eye on potential conflict.
This man was open carrying at your hypothetical scenario.
What if he was a timid soul worried about offending every statist? Perhaps not be armed due to laws against CCW?
A lot more people might have been stabbed.

I very much prefer concealed highly over open carry and have debated an open carry pastor about those benefits on the radio.
He argues that only criminals want to "hide guns.“
I've taught my students concealed carry outside of class when it comes to all weapons one might choose.
It used to be outlawed and carry criminal sentences for simply having a knife long enough to be effective at the job for special tasks. I had a big dilemma with law enforcement who might charge an innocent person for defending themselves against violence.
It seems ironic that a family member while traveling to the police academy was pulled over for speeding. His weapons were taken and not given back, although the charge for illegal transport of the deadly weapons were not given.
Since then, the Lord answered my prayers.
At the same time I am also an advocate for open carry for other reasons. It's a deterrent against crime and normalizes that the general public should be armed, not just police in uniform. When I see the occasional shopper carrying, I make a point to thank them for doing so. I guess I'm grateful for those who are protectors regardless of how.
America certainly has our father's military mindset that helps keep our country 2A. I think the Marines were the first who were issued John Browning's model 1911. I wouldn't mind if they all carried while out of uniform, like this guy did.

I don't agree with some of Dude's posts however, given we all post here and there in contribute to open dialog, I don't think it fair to levy such an accusation as that.

Where I work I can say that scenario is entirely possible.
In which case, use anything you can get hands on. Avoid,Deny,Defend.
Avoid the contact if possible. If not possible, deny the assailant opportunity to get close to you.
And then,defend your life by any means available.
Don't stop until they're not moving. Because if you merely hit them and run,you'll likely get caught by the assailant.
Anything hard, sharp and portable constitutes a weapon.
