I think I just needed a break from Christian Chat. I had over 70 notifications when I came on here again but just ignored them. Your comment here was one of them most likely.

It’s just strange when you still feel bonded to a previous relationship.

I haven’t pursued anyone since. I haven’t touched myself since. I haven’t lusted that I know of since.

I honestly don’t know how people move on so quickly but you know, only God knows their heart.

You can’t really do anything when someone stops loving you. You just have to let them go and give them grace.

My monthly lunch out with my bestie. I get to have only one more lunch with her, then she moves to AZ soon.
Anyway, I skipped breakfast and I decided to have breakfast foods for lunch...

I made chicken (baked with lots of seasoning and olive oil), left over potatoes, and a side of vegetables. Not the most exciting, but my chicken wasn't dry and that feels like such a win for me!!

I didn't feel well the last few days. I diagnosed it as detoxing too quickly.... Herxheimer reaction.

Right now we have an abundance of greens that God provides for boosting the liver for detoxifying your body. They have long tap roots that grow deep to gather lots of minerals.

I started a crock pot and filled it with goodness from the yard. Dandelions and the evasive bamboo shoots that spread from my neighbor's yard hopefully will replenish much needed minerals that I have not been able to buy lately. It's a good combination with the back bones and lower leg my friend kindly shared from the cow he recently butchered.

Please pray that these meals over the next couple weeks will help my body heal from head to toes.

Nobody but God knows what I've been going through and I haven't been complaining/ sharing on here. This forum has been a positive diversion to take breaks and try to stay positive.
It's nice to know my dear sister is praying for me.

I'm so thankful we have the Lord. What would trying times be like without Him? I'm horrified to think about it.

I'm thankful for your presence here. I've been praying for you for a while, and will continue to do so. May the Lord soon give you strength such as is spoken of in Habakkuk 3:19. 🙏

And thank you for your prayers. I only have 2 offline people that I'm close to, one lives out east and one is less than a week away from moving out west. Geographically, I'm in the middle lol.

My best friend and I had one last rendezvous before she moves to Arizona. She leaves tomorrow! We went out to eat, did some sightseeing, and went to a concert downtown.
We went to a locally owned eatery called the Painted Horse. I'm only partial to locally owned/ran eateries, and the beef at this place is from their own ranch. I ordered calf fries, which are one of my favorite foods (my bestie said there was no way she was going to have any lol). I certainly don't mind having them all to myself. Incredibly delicious! I also tried a local beer: Dunkel lager, by Marshall Brewing Company. It's a Munich Style dark lager. Anyway, it was a great meal...

I saw a recipe for garlic Parmesan chicken meatloaf. It's topped with marinara and mozzarella. I had to try it. It's sooooo tasty! I think this is my favorite ground chicken recipe that I've tried so far...

Of course!

Just to note, I did do a few different things to my meatloaf to suit my personal preferences...
1) I'm really into oats, anytime I can put oats into something I do it. So, instead of breadcrumbs, I substituted oats that I ground up.
2) I didn't have fresh parsley and didn't want to buy any, so I added a heaping teaspoon of dry parsley to the rest of the seasonings when I was putting the ingredients together. After it baked, I sprinkled a little dry parsley on top.
3) Once I had the meatloaf ready to bake, I put half the called for marinara on top. Then I baked it. After 35 minutes, I got the meatloaf out and put the rest of the marinara on top and then sprinkled the mozzarella on top. Then back in the oven for the last 10 minutes of baking.

Garlic Parmesan Chicken Meatloaf
Juicy Garlic Parmesan Chicken Meatloaf with a Golden Crust
Ingredients:
1 lb ground chicken
½ cup breadcrumbs
½ cup grated Parmesan cheese
1 egg
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
½ cup shredded mozzarella cheese
¼ cup fresh parsley, chopped
½ cup marinara sauce (optional, for topping)
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Worcestershire sauce, Italian seasoning, salt, and black pepper until well combined.
Shape the mixture into a loaf and place it on the prepared baking sheet or in a loaf pan.
Bake for 35 minutes, then remove from oven and sprinkle shredded mozzarella cheese on top.
Return to oven and bake for an additional 10 minutes, or until the cheese is melted and the internal temperature reaches 165°F (75°C).
Optionally, spoon marinara sauce over the meatloaf before serving for extra flavor.
Garnish with chopped fresh parsley and serve warm.
Prep Time: 10 minutes | Cooking Time: 45 minutes | Total Time: 55 minutes
Kcal: 320 kcal per serving | Servings: 4 servings
