Thomas did Not call Jesus Him "Jesus Christ" in that moment because "Christ" is a title, but "God" is an identity.
By saying "My Lord and my God," Thomas was making the highest possible declaration of Who Jesus actually was.
"Christ" Was Already Taken for Granted
By the time of the Resurrection, the Disciples already believed knew Jesus was the Christ (the Messiah)The Anointed One Peter had famously declared it earlier in Jesus' ministry ("You are the Christ, the Son of the living God" in Matthew 16:16).
