Matthew 15
10 Jesus called the crowd to Him and said, “Listen and understand. 11 A
man is not defiled by what enters his mouth, but by what comes out of it.”
12 Then the disciples came to Him and said, “Are You aware
that the Pharisees were offended when they heard this?”
13 But Jesus replied, “Every plant that My heavenly Father has not planted will be pulled up by its roots.
14 Disregard them! They are blind guides. If a blind man leads a blind man, both will fall into a pit.”
15 Peter said to Him, “Explain this parable to us.”
16 “Do you still not understand?” Jesus asked. 17 “Do you not yet realize that whatever enters the mouth
goes into the stomach and then is eliminated? 18 But the things that come out of the mouth come from
the heart, and these things defile a man. 19 For out of the heart come evil thoughts, murder, adultery,
sexual immorality, theft, false testimony, and slander. 20 These are what defile a man, but eating
with unwashed hands does not defile him.”

@Magenta : Good reply, sister, but God said in the Old Testament that we're not allowed to eat Swine meat: so is there somewhere else in the Bible, that says it's all right to eat this particular type of meat?

Much later Moses was given dietary laws.
It would take too long tonight to get into all the scriptures on it. I have to feed the possum. I'll never eat one though.
Not because they are considered unclean.

When Jesus brings up something we should consider it even if it might cause a bit of consternation to think about. In the Matthew 15 excerpt that Magenta offered, He brought up pooping as an analogy of the things that comes from our heart and goes out of our mouth that defile us, poopy things. This is what makes swine, and all the other unclean meats, unclean. Swine have the cloven hoof but do not eat cud, and rabbits eat cud but do not have cloven hooves, so these are susceptible to coming contamination, either by having 'handlike' appendages (not cloven hooves, so they tend to eat "with their hands") or do not chew the cud (is that a grassfed or all grain? diet) which makes them susceptible to contamination with that which defile (which I gather is some sort of emission or excrement if you go back and look at all the unclean animals and consider their chances of doing, ie. the eagle eating the guts out of its prey, the rabbit probably gets dookie between his toes while running through the forest and then eats with them, etc...)
So, it strikes me that Jesus is explaining how much easier it is to cleanse an unclean animal, and not be defiled by eating it even with unwashed hands, than either to cleanse the heart before speaking or to cleanse our words after speaking.
But even if no one follows my logic there, after seeing a net lowered full of all types of 'unclean' things, 'Peter is directed to eat and although he professes that no unclean thing has passed between his lips, he is told "what God has cleansed, let no man call unclean."
So, it strikes me that Jesus is explaining how much easier it is to cleanse an unclean animal, and not be defiled by eating it even with unwashed hands, than either to cleanse the heart before speaking or to cleanse our words after speaking.

Here's another big piece of the puzzle that hopefully will bring clarity to your good question.
Hebrews 9
"7But into the second went the high priest alone once every year, not without blood, which he offered for himself, and for the errors of the people: 8The Holy Ghost this signifying, that the way into the holiest of all was not yet made manifest, while as the first tabernacle was yet standing: 9Which was a figure for the time then present, in which were offered both gifts and sacrifices, that could not make him that did the service perfect, as pertaining to the conscience; 10Which stood only in meats and drinks, and divers washings, and carnal ordinances, imposed on them until the time of reformation. 11But Christ being come an high priest of good things to come, by a greater and more perfect tabernacle, not made with hands, that is to say, not of this building; "
There are those who would suggest to us that Jesus'sacrifice was not completed and that we must add the carnal ordinances, like meats and such things that are ceremonial and symbolic in nature. Those served their purposes as a "figure for the time then present.". However, they were not intended for the time up to Moses, nor since the crucifixion of our Savior. They were only for that time. Today we do not worry about the special meat designations or the other carnal ordinances like mixed fabrics.
Separate from carnal ordinances, The moral laws written on our hearts still have their place. They do not provide, nor do they maintain one's salvation. Salvation was never by keeping the laws. The faith was always to be upon the Lord/LORD/ Jesus.

Well pigs ARE pretty nasty creatures. They got all kinds of internal parasites. But the Israelites didn't have microscopes or thermometers, so if God had explained about bacteria or proper cooking temperatures it would have just confused them. So God said just don't eat that stuff.
All the laws God gave were for the benefit of people. If we do the things God said to do, we cause good. If we avoid the things God said avoid, we do not cause harm.
The only reason it's okay to eat pigs now is, we know to cook it hot enough to kill all the nasty bugs that come with it.
As God gave us all the laws for our benefit, even though we are free from the law it is good to go back and look at them. There's a lot of good sense there. It's good to look at WHY God said to do these things.
Farmers, don't plow right up to the edge of the stream. And be sure to let the land rest every so often. (Many years later our agriculture department figured out why.)
If you're sick, stay away from other people so you won't make them sick too. Sharing is NOT always caring.
(And modern medical science agrees.)
There's lots of other things God told the Isrealites to do, that later our science figured out was actually a pretty good idea. Even the part about burying their poop had a good reason. Of course some of those things were obviated by modern inventions like thermometers and indoor plumbing.
Next time someone asks you why we eat pigs, ask him why he doesn't go outside and bury his poop.
