Head cheese- it's actually not THAT weird. It is a hog's head meat that has been boiled and made into a spread. It's also called souse. It's very good if you like pork. Bacony (in my opinion) and good on crackers. I guess head cheese is the ancestor of Spam. Head Cheese
I swear, I thought I was going to be a permanent invalid for a day or two after I ate this :D

how about some Balut, doesn't this look delicious, please excuse me if you live in the Philippines, but I don't think I could eat this at all.

It tastes good. I prefer a 16 days old balut because the duck fetus is much smaller. That one must be 21 days old. Some don't burry the duck eggs but incubate them instead.

Dang, I love it. My grandmother used to buy it all the time. She ate pigs' feet, but I didn't (although there are pigs' feet in head cheese). Her father was a hog/cotton/peanut farmer. She said they ate everything on the pig except the squeal. They fried the pigs' tails.

Souse is good, it is head cheese, but in vinegar.

I'm still not a fan of headcheese, but being the major Little House books fan that I am, I'd love to try frying a pig's tail! The only time we raised a pig, his tail had been docked :mad:

My grandmother told us many things about growing up in the 40s. Her dad was a sharecropper. So they were poor. He would catch opposums and keep them in a pen and clean them out by feeding them corn. Then they would kill and eat them. She ate squirrel brains gravy and squirrel, they also ate turtles. It seems like a different world. During WWII, there were German prisoners of war assigned to work on some of my great grandparents' landlord's farms and my great grandmothe had to cook the German prisoners cabbage every day. My grandmother said they were told to stay away from the Germans, but I think it was because they were little girls and not so much because the men were Germans and POWs. I read that some of the POWs were so impressed by how well they were treated in Alabama, that after being repatriated, they decided to immigrate here.

Lol, I think head cheese is similar to brawn. I guess they called it cheese because it's like a block. :)

Toad in the hole. It's basically a batter mix with sausages.
No we don't go around catching toads and eating them!
Its often served with beef or onion gravy.

A small variation to this is called Pigs in a Blanket where the Batter almost completely covers the sausages but leaves the ends peeking out.

In London an old Cockney meal is Pie and Mash. This consists of a Pie made of minced beef covered in pastry made of plain flour and eaten with mashed Potatoes the whole dish is covered with a gravy made of plain flour and Parsley known as Liquor. It doesn't sound exiting but it has a unique taste to it. It was originally eaten by Cockneys in Londons East End
and served as a cheap meal during hard times.

First time I went to London and I was offered pie and liquor, I said I don't drink! :D
