(And yes I know of churches who have had gatherings on ALL of those days and not just holidays either)

which were not ceremonial laws, and
after the cutting of the covenant (Ex 24:6) with an altar representing the Lord, and twelve pillars representing the twelve tribes, probably with Moses walking between them as mediator (Ex 24:4-6), and
after the people pledged a third time to obey the laws (Ex 20:2-23:30) in the Book of the Covenant
(Ex 24:7), which were not ceremonial laws, but civil laws,
when the Covenant was then confirmed by the blood of the Covenant sprinkled on the people.
The ceremonial law was not given until later in Leviticus, from the Tabernacle.
