The bible says your soul/spirit goes to God. It doesn't "sleep". Even when you sleep, you dream, you think, the mind is active.
I also agree..

"To be absent of the body is to be with God"

So which is it?

Could it possibly be both?

The obvious answer is that "His ways are not our ways"

and just as soon as each and everyone of us accept that fact that by no means have we now nor will we ever be able to comprehend the presence and knowledge of God in His awesome fullness, at least not on this side of eternity, the body of Christ as a whole will be a far better people because of it.

Well i think the bible calls it sleep because it is the first death. From this death everybody wakes up but the second death is final

I like that! Very good point and something to remember.

but still the question remains... when we die, does our soul sleep until the rapture / judgment or do we immediately find ourselves in heaven or hell?

The bible eludes to both. So which is it?

I think our bodies sleep. But just like we dream when we sleep , our soul is still active somewhere. And we have awareness of it. All are alive to God.

In Christ's exchanges with the Sadducees, as well as denying a future resurrection , it were they who denied any kind of existence of the soul after death or spirit world. But Christ said:

Luk 20:38 For He is not God of the dead, but of the living. For all live to Him.

We are living souls
Gen 2:7
And the LORD God formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a living soul. When we die our bodies returns to dust and the breath of life goes back to God.We are no more.We are not in heaven or hell.we sleep in the grave waiting for God to ressurect us.
Ecc 9:5 For the living know that they shall die: but the dead know not any thing, neither have they any more a reward; for the memory of them is forgotten.
Psa 115:17
The dead praise not the LORD, neither any that go down into silence
Dan 12:1 And at that time shall Michael stand up, the great prince which stands for the children of your people: and there shall be a time of trouble, such as never was since there was a nation even to that same time: and at that time your people shall be delivered, every one that shall be found written in the book.
Dan 12:2 And many of them that sleep in the dust of the earth shall awake, some to everlasting life, and some to shame and everlasting contempt.
Psa 146:4 His breath goes forth, he returns to his earth; in that very day his thoughts perish.

Most will have a hard time wrapping their limited understanding around this one but if I had to make a guess as to which perspective is the right one, I would have to say BOTH.
I used to have many big ideas on the afterlife. But nowadays I am not so sure. The bible hardly speaks of
a world after this, in that the kingdom of heaven is meant as a good heart, not a external place. Next time I see a ghost I will ask him how he got like that!
