Why do Dispensationalists teach Separation Theology?

The law and the prophets were prophesying Jesus as the coming Son of God that will be given to the Israel. (example Jeremiah 23:6)

Once John came, he was the final prophet that announced Jesus in the flesh to Israel, Jesus came in the flesh after him.

That passage is not saying that there are no more prophets after John.
I would believe that if it were written the way you wrote but it's not written that way. And again, when I read the NT I don't see new prophecies, I see more revelation given to the OT prophecies.

This is the most critical part in that as you said the Revelation given to John had never been spoken of in the OT but also in the NT up till after the Lamb was slain. Before the lamb was slain none were found worthy to loose it's seals or look upon the Revelation. Which means that it was not found in the OT nor the NT(including the Olivet Discourse),,,it was loosed and looked upon after the Lamb was slain according to Scripture.
Here's one example of Revelation in the OT.

Rev 6:2 And I saw, and behold a white horse: and he that sat on him had a bow; and a crown was given unto him: and he went forth conquering, and to conquer.

Jesus riding in on the white horse, the bow, the crown, conquering, all of these are written in the Old Testament in several different places.

I believe the Jewish people, Israel, as a whole, were chosen. They are the apple of His eye.

“For you are a people holy to the LORD your God. The LORD your God has chosen you out of all the peoples on the face of the earth to be his people, his treasured possession. The LORD did not set his affection on you and choose you because you were more numerous than other peoples, for you were the fewest of all peoples. But it was because the LORD loved you and kept the oath he swore to your ancestors that he brought you out with a mighty hand and redeemed you from the land of slavery, from the power of Pharaoh king of Egypt.” (Deuteronomy 7:6-8)

God chose a nation, despite their unbelief at times, dispite their disobedience He has remained faithful to the Jewish people and the nation. That does not mean every Jewish person will make it to heaven. But right now the Jews have been blinded to the truth. We also were once enemies of the Gospel, thank God He didn't give up on us.

You believed the 2 witnesses in Revelations 11 happened already or mentioned elsewhere in the OT?

That's your opinion of what those verses mean, I don't agree with that plus your view doesn't line up with the prophets prophesying until John.

Not only does dispensationalism throw out the prophets ending with John, it also totally rejects John the Baptist as being Elijah. This is done because both of those facts debunk the dispensational view.

Mat 11:13 For all the prophets and the law prophesied until John.
Mat 11:14 And if ye will receive it, this is Elias, which was for to come.
You think everyone is the type of dispensationalist that you have conjured up in your imagination. They aren't. Quite frankly that term is irrelevant. Get over it.
Garree is correct in stating that the OT prophecies and JTB proclaimed up to Christ. There were undoubtedly prophets and prophecy after His resurrection, proven beyond doubt by many persons here. You do err and stubbornly refuse to heed good council by sincere people, resisting the Spirit of Truth.
