These are all only guesses. There can be so many reasons. If this continues, or maybe even right now, the best thing for the OP to do is to have some blood work done and get a proper diagnosis.
It can range from being something simple, or something deadly.
He is young, so it is probably a relatively minor issue, but you never know.

Be careful with the low carb diet. Carbs help get tryptophan into your brain. Tryptophan is what your body uses to convert to serotonin. Insufficient serotonin can cause depression and anxiety.
If I eat more carbs I have to take more insulin. To much insulin at one type can trigger a stroke or heart attack. That is one of the side effects of insulin!

He is young, so it is probably a relatively minor issue, but you never know.
A lot of things that cause fatigue will not show up on blood work. You need at a sleep study test or more in depth testing to determine the cause!

That's true. Blood work can uncover a vast majority, but not everything.

There are types when the Doctor doesn't order all the necessary blood work. Like when I first got diabetes. All would have taken was one more blood to determine what type of diabetes I had! The Doctor did not do it! I suffer for two years and loss a lot of weight and became very pale because he thought I was a Type 2. He would not allow me to see a Specialist either! So I switch Doctors he refer me to a Specialist. When I told The Specialist what kind of problems I was having he knew right away what it was but waited for the blood test to confirm it. So you have to find the right Doctor too!

There is so much mis-infornation out there. Eating 5 to 6 times a day is not the way to go.
you ain't kidding my uncle eats 6 to 10 times a day and it hasn't helped him,nor our grocery bill!

Sometimes I'll have hours where I'm just sluggish. I eat healthy most of the time and go outside almost every day. Anyone else have this problem? Any solutions to this?

Yes i used to, until i cut out a lot of the GMO foods i used to eat, sugar,wheat, and grains,junk food,juice/ soda/beer/energy drinks, and switched mostly to organic.. I eat a lot of quality meat and leafy greens like broccoli and kale/ cabbage and fruit...Its done a lot for me, it changed my mood, removed my all day sluggishness, reversed cavities,fixed my dry eye problem and various other things. Going organic might be the thing for you, and don't be discouraged when people say its expensive because it really isn't.

Actually I found eating smaller amounts 5 to 6 types a day helps! Your stomach can't handle big meals and you don't have a large amount of sugar entering the blood stream!
