Well Bobby's dtill draggin' tail but his wife forged on ahead and is due tonight. Wev'e never met yet so my daughter is fixin' a big old pot of Tex-Mex style chili w/cornbread and cream cheese on the side. Bobby drove patrols in Kuait & Iraq so I 40 should be a breeze.

This is a different recipe than most of the cake ingredients I have done and it is a dense cake but so good... Better after the frosting has been on the cake overnight....soaks in...

Caramel Apple Cake

Cake
1 cup vegetable oil
2 cups sugar
3 eggs
3 cups flour sifted
1/2 teas salt
1 teas baking soda
1 teas cinnamon (more if you like cinnamon)
2 teas vanilla
1 cup chopped pecans (optional)
3 cups peeled and chopped apples

Frosting
1/2 cup butter
1 cup brown sugar
1/4 cup half and half milk
1/2 teas vanilla

Directions

Cake
Preheat oven to 350 degrees. Grease 9 x 13 pan. Combine oil sugar, vanilla and eggs. Stir in sifted flour, salt, cinnamon and baking soda. Add apples and pecans. Spread in prepared pan and bake for 45-50 minutes. Cool for 2 hours. Then prepare frosting.

Frosting
Boil all the ingredients in a small pan for 2 minutes. Set pan in bowl filled with ice water. Beat icing until of spreading consistency. Spread on top of cake.

That's it and like I said this is better when the icing is on the cake overnight as it just melts into the cake....
I finished the last of the cake today, very good, yeah, good icing too.

It's been a long greueling week and It's not over by a long shot. We still have furniture to move and no truck yet then we'll have another truck load to move in. I'm gonna take a seiesta and prepare for what comes next. Too da loo!

Good morning world, it's 8:30 am in Texoma, coffee's brewing and the pop tarts are stale but eatable. Just waiting for the phone to ring.
But not today.

I'm down with the Pop Tarts too. I like the plain strawberry variety the best but brown sugar cinnamon is acceptable too. Toaster Strudels are good too but don't really enjoy having to cut open the little glaze packets and then spread it over the top. Really, who has the time for all of that drama too? It's also aggravating to toast the Pop Tarts and Toaster Strudels in the toaster. It's like the saying, "a watched pot never boils". I have been known to burn them too from putting the setting on high to get 'em toasted faster. On second thought, maybe I'll just get a bowl of Rice Krispies and OJ to keep things simple. I'm starting to believe that I'm a minimalist.

Milk gives me indigestion but not cheese. A nurse practitioner explained it once but it's too complicated to try and explain. Milk turns sour before I can digest it, it's too unstable. I miss my raisin bran!!

Good morning peeps. I just about finished my first cuppa, and I am getting ready to start a Monday. The day takes on a different meaning when you are retired. Not as blue as it used to be. Know what I mean?

The boy jest went out for some brekky, and said he is bringing some back with him.

Get some Lactaid and take it with your milk and ice cream. Take about 3 for milk and 4 for scream. Wal-Mart sells a generic that will save you about $5 per 100 pills. It is called "Dairy Digestive Supplement.";)

I'm not lactose intolerant, They checked that out at VAMC Long Beach. Just milk and unsweetened cream. I think sugar helps speeds up digestion so low fat ice cream, cheese and sour cream and non fat milk are ok but nonfat milk, why bother? It tastes terrible. I use non dairy creamer sometimes as a substitute but it's very expensive. I quit drinking milk in my teens but I so miss cereal.

If weather is cold outside i put pop tarts in toaster..yummmm

You are the first person that I have heard say it tastes good but now that I am on a direct bus route to Wal Mart I may try some. With no fear of spoiling in the hot OK. sun waiting an hour for a bus transfer. We always have count chocula in the house!
