Some friends of mine were talking about some things they like at restaurants, things that aren't really on the menu, but it's something the regulars know about. Do you have anything you like to order down at the local diner that isn't exactly on the menu, but probably should be?

Many years and a few factory jobs ago, I used to have a job at a Taco Bell. There was one snack a lot of us enjoyed. Take a fried tortilla flour, melt shredded cheese on it, dust it with cinnamon sugar from the cinnamon twists, then put sour cream on it. When we told a new person about this the reaction was always the same - "Ewww!" But when the new person tried it, the reaction was again always the same - "Hey that's pretty good!" No idea how we would have rung this up on the register, but fortunately the managers made them so they were free.

Many years and a few factory jobs later, I once again find myself w*rking at a fast food factory... this time the stereotypical fast food factory itself, McDonald's. I started wondering if I could make a quesadilla on the grill. So I started with two chicken snack wraps, minus lettuce, plus onion. I took the chicken from both wraps and chopped it up, spread that on one of the two tortilla flours, put the onion on next, then the cheese on top so it would melt down and sautee the onion under it, then I put the second tortilla on top of the whole mess and put it on the grill. When it was through cooking I took a flat-edge and chopped it up into bites. To pay for this I rang up two chicken snack wraps, minus lettuce, plus onion. This became so popular that I was frequently asked to make it for other employees.

There is a local diner that my uncle Fred frequents, and where he has started ordering something that is not on the menu - a kitchen sink omelette. That is a three egg omelette with everything but the kitchen sink in it... ham, bacon, sausage, onion, every ingredient in the kitchen that might go well in an omelette. I have tried it and it's pretty good. Very filling though.

I make sourdough bread, and sometimes there is dough left over that is not enough to make a full loaf. With that dough I make sourdough hamburger buns that are bigger around than a traditional saucer. There use to be a local diner that I knew used sausage from a local butcher shop for their sausage biscuits. I took one of my hamburger buns over there and asked the cook to make me a sausage burger that would fit that bun, with mustard and onion on it. She did, and man, what a breakfast! Unfortunately she soon moved back to the state she came from, to be back with her family I believe.

Sometimes when I haven't had a good night's sleep and I need to make it through the day, I stop by the local Jack's eatery and order a large mocha shake. If there's a new person at the cashier he'll look at me kind of fishy and say "We don't serve that" but the old hands know to ring up a large chocolate shake, then take a large cup and fill it a third full with chocolate ice cream, then fill it up the rest of the way with hot black coffee. Coffee melts ice cream, ice cream cools coffee and I'm left with kind of an iced mocha latte, only creamier. It's the most delicious way I have ever found to ingest a large amount of caffeine, and the employees have told me I started them all experimenting with different shakes and soda mixes.


So how about y'all? Anything you order at your local diner that isn't on the menu, but it really should be?

I order off the secret menu at In N' Out. You have to go with double meat because their beef patties are too thin. Also fry light well. Animal style when you're younger.

McD's has a secret menu too... if somebody comes through and orders a "McGangBang" we know it's a mcdouble with a mcchicken patty in the middle.

One of the managers refers to it as the 4-20 special. "I refuse to call it that other name, and you can not make me believe a pothead did not come up with that."

I tried duck confit last summer for the first time at a very fine French restaurant in Bethesda. It was very good served with a brandy sauce. Well portioned and priced, it is a fitting dish for a business class lunch or an intimate date. Unfortunately, out here in the Midwest it is hard to come by, along with French cuisine in general.

Hmmmm... for special requests... I'm pretty boring

as a teen I once asked burger king to give me a whopper with 5 patties and 5 pieces of cheese and none of the other toppings... they refused my request so I ordered 3 plain double cheese burgers...

...and when I have went to taco bell I always asked for extra beef in the beefy nacho griller....



But when I was a cook (years ago) and wasn't swamped I really enjoyed getting special orders myself....

I've added menu items based on requests from others that became common when I ran a small kitchens breakfast shift


and I've even made eggplant parm for someone at bon appetite before even though none of those ingredients were on the menu that day.... (we had pretty much anything you could ask for ... but made a new set menus daily.... my station in the years i worked there never posted eggplant parm on the menu before this person asked)

most of us cooks who like to please people and take comfort in a job well done find special orders fun when we arent blind sided during a rush

but less experienced cooks or people who are thrown off by a change in routine may not produce the best non menu items

There is a little hole-in-the-wall burger joint near here that specializes in very good food. Their burgers are not preformed patties from the freezer and their fries are made from a big bowl of potatoes that they slice up and fry on the spot. Delicious!

They also have a menu of add-ons for the burgers - avocado, bleu cheese, red onion, a fried egg, lots of stuff.

Sometimes when I go there I ask them to whip up some bleu cheese dip for my fries. That is where they take some bleu cheese and soften it in the microwave, then mix it with a bit of mayo. First time I asked for that, the waitress didn't even blink. She acted like people ask for that all the time. I dunno, maybe they do.

That's a super reasonable request.

I've made bbq sauce before when a kitchen I worked at didn't have any left


I sauteed a super finely chopped onion in butter then added
ketchup
brown sugar
salt
pepper
tiny bit of garlic, vinegar, worchestire and a tiny bit of smoked paprika... rounded it up with a little honey

that kind of stuff was the most fun id have on the job

As a resident of southwest Tennessee, where there's a pork barbecue joint on about every corner, I would have liked to try that barbecue sauce.

Once my favorite little shop used to make what they called a “Fall Harvest sandwich”. It was turkey, cheddar, apple and bacon. They don’t have it on the menu anymore, but I always order it when I go. They don’t ever say I can’t order it, but some of the newer people have commented that it sounds like a delicious sandwich. It should be on the menu. I’m thinking they intended on it being a seasonal thing.

I will also order it at other sandwich places.

I love beer battered fish, its so nice and tastes wonderful. Most pubs do not do this, even the supermarket has stopped selling it. So gutted.
