I’ve personally never known someone who has always had just one. At some point, one leads to two, three, etc…

I have stated why I don’t drink. I never want to be a stumbling block.
Yes, so you have said and so I have acknowledged. What you fail to acknowledge
is that drinking is not wrong for everybody under any and all circumstances.

Wine is a mocker…not maybe or can be if over consumed…wine is a mocker. Don’t be deceived into thinking otherwise.

Proverbs 20:1 Wine is a mocker, strong drink is raging: and whosoever is deceived thereby is not wise.

How much is too much? Can it be different depending upon personal preference? When does alcohol begin to affect the mind?

There is a world of difference in potato salad and alcohol. What a suggested contrast. One sided...isn't it?
i freely admit my one-sided disdain for potato salad.
however i refuse to eisegetically twist scripture in order to justify it.

if you can be thankful for potato salad, then it is clean for you.
alas for myself, i have not yet reached a level of maturity ((or starvation)) by which i am able.

That is different for different people, and is conditioned by a wide variety of other factors.

By the way, just because you don't know anyone who can stop at one drink, it doesn't mean there aren't such people. Your ignorance of the matter is neither normative nor instructive.

Grape juice in general is a great anti-oxidant and anti-inflammatory food. It’s not the alcohol that is good for the stomach. Alcohol is terrible for organs.

The very first thing alcohol affects is one’s judgment, before speech, vision, or physical capabilities.

Num 28:7: "And the drink offering thereof shall be the fourth part of an hin for the one lamb: in the holy place shalt thou cause the strong wine to be poured unto the LORD for a drink offering."
