I was just back scrolling here to see what I missed when suddenly I started craving something like this!
Must've caught just enough of a glimpse while back scrolling to set off the crave alarm :LOL:

We don't do much pasta anymore :confused: and sometimes I really miss the ease and convenience of pasta dishes.
 
its all food, I can eat it, yum.

But pasta is particualrly (idk) easy to 'gourmetize' or make very delicious, owever, I really dislike elbows, shells, round tubie thingos, mini bits, and other things that are impossible both to chew and to scoop with my fork. ragotini (?) and angel hair ar my personal favorite, they both hold sauce, and are easy to eat. I've thought about stuffing big shells, but have not found a recipie.
 
Spaghetti bolognaise has to be spaghetti not vermicelli - needs durhum wheat and pasta must be al dente
Water must be salted.

Macaroni is smooth elbows

Lasagna has to be in big sheets, not small, with ruffles on the edges.

Fettucine needs to be flat noodle.

If hand made, needs to be cut in the noodle maker where you roll it like a paper shredder.

Dried pasta must have a yellowish colour.

Sauces must be tomato paste, olive oil, pesto must be basil, mac and cheese must have white sauce and real melted cheese.

I'm fussy.

Not a fan of shells, but could be used for marianara, minestrone,

Gnocchi, not a fan of either but must be chewy

Ravioli can be green, but the meat inside must be minced.

Oh and to eat spaghetti, you need to twirl it on your fork. If you can't, wear a bib. Don't cut spaghetti.

Pasta cooks in boiled salted water about 12 minutes, and you must test it to make sure its al dente, and add little olive oil so it doesn't stick to the pan.

Garfield loves lasagna obv but Jim Davis regretted making it his favourite and would have preferred pizza, it's easier to draw.

Mousakka needs eggplant, and lamb

Pasta bakes need cheese on top. Grated for melty goodness. It needs to be golden yellow colour and slightly brown on top. Don't put too much water or it will be soggy. Drain your pasta in a colander and rinse with cold water.
 
Not sure how I acquired this knowledge as not a Master chef. I don't even cook pasta that often.
Can I just say God works in mysterious ways...cooking pasta.
 
Well, my daughter wanted boxed mac and cheese tonight and asked for help in making it.
I realized that I do not follow the boxes directions :eek: yeah, I'm bad, I know.
But hear me out!
I don't follow the boxes directions because I realized a long time ago that I don't like how it turns out doing it that way.
I much prefer to drain, leaving just a small amount of boiling water in the pan.
Then when I return the noodles to the pan I add the butter (which I usually cut into a few smaller chunks) while it is still all near boiling hot, this helps it melt quicker and better.
Then add the cheese packet! (Years ago the box very specifically had you add milk then cheese and I never liked that. The milk cools it down and the cheese didn't fully mix in, leaving chunky powdered cheese clots in the final product).
Once the cheese is mixed in the still very, very hot water butter noodle mixture, I add the milk last.
Now, when the small amount of water is left in, and the butter melts in just right, and the cheese dissolves perfectly I find I don't need 1/4 cup milk, not even close. Just a teaspoon or 2 to make it a little creamy. I find adding the boxes direction of 1/4 cup milk to my water/butter combo just made it way to soupy.
So no, I don't follow directions (as far as the boxes are concerned) but once you have it the way I make it, you won't blame me.

This sounds yummy, maybe I make it tonight - mac and cheese.
I don't have boxed mac and cheese together I just make it from the pasta and the cheese sauce. But I also add pineapple, and nutmeg, and maybe breadcrumbs.

I haven't made it in a long while. I used to make it when mum went away from the house for dinner, and so I would be home on my own and I could cook whatever *I* liked, and since she never ever made mac & cheese, since she never ate cheese that's what I would have.
