@CarriePie, if you have time, could you give your best tips on making a killer alfredo sauce?

Maybe even list a basic recipe (or link)?

I've tried numerous variations but I seem to keep missing the mark. 😭

I'm liking this recipe. I've been making things lighter lately. I actually used it for the ^chicken cavatappi. I just swapped the shrimp for chicken and altered some other parts of the recipe a bit. You could omit the meat altogether.

As you see, it says:

1 T. olive oil
1 T. butter
5 cloves garlic, minced
salt and pep to taste
1 T. flour
2 C. lowfat milk
2 T. cream cheese

But, I would suggest upping the flour just a bit for a bit more thickening power. I cut the recipe in half, so for that amount up to 1 T. of flour for half the recipe. Or if you make the full recipe I suggest 1 1/2 T. - 2T. flour.
Also, instead of 1 T. olive oil and 1 T. butter, I used 2 T. lite butter. I also used whipped cream cheese to make it a bit more lighter, but sticking with regular will taste richer. I'm just trying to lighten things without losing flavor as I reverse all my ice cream eating lol 😆
Additionally, I added some Italian seasoning and a pinch of nutmeg (just my personal taste preference for whatever it's worth).

I am all about trying to make recipes healthier.

This is probably why a lot of my attempts at cooking fail, because I'm always trying to substitute lower-fat and lower-calorie ingredients.

I like that this isn't using the typical heavy cream and massive amounts of butter like I see in most recipes.

I splurged today and ordered from Bole Ethiopian Restaurant in College Park. I ordered the awaze lamb tibs, injera, and a sambusa. I also ordered ayib (Ethiopian cheese).

The lamb was incredibly tender. Very spicy, but the best lamb meat...

But... but... Lambies. 😢

(Never mind me. I'm one of those hypocrites who has no problem eating cows and chickens -- because they're kinda ugly -- but then pretends to have a conscience when it comes to not eating animals I think are cute.) 😆

If it helps any, I only eat lamb on rare occasions lol 😁🐑

I tend to eat a lot of ground turkey. It's low cal, very versatile, tends to be economical, and I just like it. I don't think turkeys are ugly, but I sure consume a lot of them lol 🦃

Yesterday my friend and I went to use one gift card..
Appetiser was mozzarella sticks with garlic jalapeño mayonnaise.

For main course I chose a flank steak in red wine sauce with veggies.. instead of my usual burger meal, as we also got a dessert, I would not have been able to finish all after a huge burger.

And a dip for my fries were same garlic jalapeño mayo. Which is the best. 😋

I found ..old, ehem, expired.. shirataki noodles from my cupboards, so naturally I decided to taste them.
Those taste like.. nothing. But we're really good with chili white cheese.
Garlic chicken and a plain cucumber, bell pepper, lettuce salad with cubed cheddar.

I think those are the same type of noodle my mother would make a Hawaiian dish called chicken long rice, which kind of tastes like chicken noodle soup but with a bunch of ginger in it, sooo good.
