Surströmming (pronounced [ˈsʉ̟ːˌʂʈrœmːɪŋ], Swedish for "sour herring") is fermentedBaltic Seaherring that has been a staple of traditional northernSwedish cuisine since at least the 16th century. Just enough salt is used to prevent the raw fish from rotting (chemical decomposition).
