So, Judas Iscariot is going to be one of them?

No. To consider Judas a follower of Christ is to deny the words of Jesus, Who called Judas “son of perdition.”

Judas was not saved, but was an unbelieving, unclean devil who betrayed Jesus. (John 6:64-71; 13:10-11)

This is the correct answer. Judas because he fell by transgression his seat was given by the Lord when the eleven inquired of the Lord and the lot fell upon Matthias. Matthias and also Joseph aka Barsabas, it is noted also were among the followers of Jesus during Jesus' ministry and life which is recorded in the Gospels, and so Matthias is also applicable to the twelve thrones as he followed Jesus during the events of the Gospels.

My Bible says Jesus told them to wait. I see nothing about Jesus instructing them to choose someone else.

Jesus told that to twelve apostles including Judas.

Jesus chose the original 12, and also chose who replaced the one who betrayed Him. Reiterating what the 11 did in not following Jesus' instruction to them does not change this fact.

No, the Eleven did prudently, fulfilling the scriptures and so Lord God, whom they prayed to, chose Matthias to fill the room of Judas Iscariot whom fell away because of his betrayal.

I leave the choosing of the 12th to Jesus, not Peter who three times denied Him and was addressed as Satan. Scripture was fulfilled in God's time, as it always has been.

If that was true then they would not have needed to pick a replacement for Judas

Okay, well the Lord chose Matthias to take the room of the traitor and to fill the number of the Twelve in fulfillment of the scriptures as recorded in Acts 1.

Interestingly, Judas is the only apostle that Jesus called friend. By contrast, Jesus called Peter Satan.
