Sometimes I make pasta sauce with red/kidney beans instead of beef.

Marinara/tomato basil sauce with red beans, onion, lots of garlic, and either green pepper or zucchini with italian seasoning and a few other spices.
I also meant to say: I cannot remember the last time I bought ground beef! :oops::giggle:

However, while I have been going through this round of post-op chemo treatments, my church fam has been providing some meals for me; one was a fairly large try of very beefy lasagna, and another, four servings of rotini in a very beefy tomato sauce with cheese, and I must admit, I very much enjoyed the meat sauces! For a time many years ago, I could not eat beef at all... I would say, it did not agree with me :geek: I then subsequently discovered that digesting beef was greatly aided if it was mixed with other meats, such as in a meatloaf with pork and lamb, or one of those mixed meats hero subs, and eventually I was able to eat beef all on its own again(y):D

I love to eat my wife's meatloaf. There are those :) that frown upon this dish but I enjoy it very much. I also love left-over meatloaf sammies with mayo and sliced tomato. I hope that the post-op chemo treatments are going well. You are on both of our minds and in our prayers a lot and also Bob who PM's me occasionally.

Thank you, again! I start my 4th of six rounds of two weeks on, one week off, on Monday :)

I did experience some fairly severe neuropathy in the soles of my feet toward the end of this last round :censored:

Hopefully it will not recur, as apparently the nerve damage can be permanent.

I have already had more chemo post-op than I did pre-op, with radiation :geek:

I usually make a big batch and freeze up the sauce for later. I like to add double mushroom and half ground beef and half spicy Italian sausage. I got the recipe from my Italian grandma who’s family owns a bakery in Italy. Spaghetti is my fav!

Oh, oh, oh! I bought some spicy Italian chicken sausages today also :)

Maybe I can try some of that in my meat sauce as well :D

I forgot to mention that instead of adding ground beef, I sometimes slice hot dogs into the pasta gravy. Sometimes, I slice cheese-filled hot dogs too. I realize some people find that gross, but ground beef sometimes takes too long to prepare from scratch.

Also, I sometimes add fresh vegetables like green peppers, fresh tomatoes, garlic, onions, basil, mushrooms, and shredded cheese like permasan, Mexican, cheddar, or any kind really.

And, let’s not forget olive oil addition after the gravy is done and sometimes a tiny splash of balsamic vinegar too.

Interesting. When I want a quicker option, I use red/kidney beans unstead of beef.

My mum used to make an Indian Spaghetti. It was unlike the Italian one. It was dry and had no sauce. It was the best!!!!!!!!!!!!!!!!

You use grilled pork chops cut into cubes and you add it to onion and garlic then you add a combination of indian spices. Neither my sister or I can remember the combination of these spices. We do know for sure it contained cumin, coriander and garam masala. There are a couple missing. We have tried several combinations but neither of us have managed to get it as good as mum used to make.
You mix the spices with the pork chops, onion and garlic and then you had the spice mixture to the spaghetti and then bake. The spice mixture would coat the spaghetti. It was one of those meals that you go back for seconds :eek::D

Sometimes when making spaghetti I will substitute sweet Italian sausage in place of hamburger which gives it a whole different flavor. Pretty yummy.
