Why would an all-knowing God make (healthy) dietary laws and then tell His Son to go and change that? Did He change His mind about pork chops?

He canceled the record of the charges against us and took it away by nailing it to the cross. In this way, he disarmed the spiritual rulers and authorities. He shamed them publicly by his victory over them on the cross. So don’t let anyone condemn you for what you eat or drink, or for not celebrating certain holy days or new moon ceremonies or Sabbaths. Before it was unclean to eat with gentiles and etc., but Jesus revealed to Apostle Paul that what he had been taught all his life was unclean -- was now clean. The point was for Paul to preach the gospel to the gentiles and has nothing to do with pork or other unclean foods.
God did not change the dietary laws, he just made concessions to us changing disobeying them.
If we had obeyed God and remained sinless in the garden, we would still be eating a raw vegan diet. But that changed due to our sin.
The ultimate example of this is the father sending the son to die for our sins.
Looking at it from a human perspective, if we had not eaten the forbidden fruit, Jesus would never had to have come to the cross. Yet another plan B God had to implement because of our sins.

it was never unclean to eat with gentiles. that was a man-made law. not Torah. I agree it had nothing to do with pork.
that is right. He took the charges against us, not the law.
if you get a speeding ticket, you go in and pay your fine. The law is satisfied, but they don't run out and rip down the speed limit signs, just because your fine was paid.

The answer is in this last verse,for it is sanctified by the word of God and prayer,it is spiritual in the New Testament.
The Old Testament had the moral laws,laws of love,given to them,but nobody could live up to them to be spiritually right with God,so it is basically a physical covenant with physical blessings,physical laws,and if their sins were covered by the blood of animals,when Christ shed His blood it washed away their sins,and then they became spiritual.
So God had physical laws for them in the Old Testament,which means since it was not spiritual it did not cleanse certain animals for them to be able to eat,because the Spirit was not working among them in the same capacity that the Spirit works in the New Testament.
In the New Testament it is spiritual,so we can eat what we want,for it can be cleansed,for it is sanctified by the word of God and prayer,where it could not be cleansed like that in the Old Testament.
The same with all the physical ordinances of Israel,since it is spiritual now they do not apply anymore.
He changed the dietary law at least twice before the Israelites got their marching orders...the ball is in your court.

I doubt it. If your jesus ate a pork chop, he would be a sinner, and not a savior.
well, when you are going to flood the earth with water, it is difficult to grow a crop. But even Noah knew the difference between clean and unclean animals.

don't use a private interpretation when Scripture gives you the real interpretation. That vision was about people. that is all. Do not call people unclean.
that is what this part of the Word means. it is not " private interpretation " . you cannot blend old and new covenents.
i'll answer that when you say new and old covenants or not. and there is no " renewed covenants"
All Old testament was just a symbolic preparation for New Testament. When the real came, there is no need to keep the image.
