We talk a lot about food in this forum so I thought I'd start a thread about foods that have been rescued from being bleh. I seem to have a knack for taking a mistake someone made and making it... well, not incredibly wonderful, but decent and edible.

For example:

Someone made a pan of fried potatoes but she didn't put enough oil in them. Or the heat was too low. Whatever, they didn't brown. It was kind of halfway between mashed potatoes and fried potatoes. Hmm... I have a jar of pickle juice from some homemade pickled stuff, and there's some pickled onion in it. I diced up some of the pickled onion, poured in some pickle juice, a little mayo and took a bite. Potato salad! (I swear, I didn't even THINK about potato salad until I took the first bite. But that's basically what it was.)

Someone made some chocolate oatmeal cookies and they turned out rather dry. I mashed them up in a bowl, added more oats and some milk and microwaved the whole mess. Made a pretty good chocolate oatmeal.

Someone made a pan of fried okra and it was... well... slimy. Even the person who made it couldn't muster up any enthusiasm for eating it. Hmm... add a bit more cornmeal to soak up that water... too dry, add a bit more oil... add a bit more cornmeal... bit more oil... We wound up with pan fried okra cornbread. Sounds odd, but it was pretty good.

So what have you rescued lately?

I burned some toast and scraped the blackened part off with a knife. Does that count?

That's blackened bread. Uh, french blackened bread. Blackened bread couteau gratte'

I went for a dinner last night with a colleague of mine. His wife was supposed to join us but she had some work to attend to, so it was just the two of us. We went to an Iranian cafe. It was beautifully located right on the sea coast. The interiors had the Persian charm too.

I ordered a dish which consisted of mutton pieces cooked in a gravy of red beans and onions. It was accompanied by a portion of orange rice, which was basicallt rice cooked with green grams, fried challot rings and sweetened orange peels.

The food was so tasty that I had to rescue it by eating the entire plate.

My lettuce got frozen in the refrigerator (happens frequently :( ) It may be beyond rescue.

ummm... i tried to make butter cream for pancakes filling.. but its not good :( .. i add lot of grind oreo and choccolate sprinkle and raisin.. mix mix mix.. :D

How about a food "unrescue"?

I have a "buffet mentality" when it comes to food--as in, I often want 4 different things all at once.

Last night after the pizza I wanted alfredo. And I'm always throwing "this or that" in as an experiment, so instead of just using parmesan, this time I used parmesan and a handful of romano.

Argh. It was ok. But I either used too much romano or shouldn't have put it in at all.

That's why I leave this kind of stuff to all you experts out there.

if a gravy gets too thin, add some flour (and sir very very well), it will thicken.
- Corn flour is best, but be careful so it don't go too thick :p

Theory (never tried) if you add too much salt, put a (sliced?) raw potato in, in theory it will absorb a bit of the salt

If i made something to salt (potaio or vegetables) when its still hot i rinse it with water, then pour the water away, done. If its not to long it will be still hot.

Had to rescue the food rescue thread.

Also added too much gyro seasoning to some meat (in my defense the directions were all in German) and needed to rescue it. So I mixed it in with some butternut squash that I'd fried up in the skillet. Gyro flavored squash; it was actually quite good. (Seriously you can do a lot with fried squash)
