Oddly enough I went into a cheese shop in Switzerland and they didn't have any "Swiss" cheese.
That's because they can only export it. The locals got tired of being ripped off long ago.

They found out nobody would eat it when they visit Switzerland, because tourists insist on eating only imported cheese. The cheese in Switzerland is domestic. Far inferior.

Somehow I missed this thread.
It depends on what the cheese is for.
Some examples that appeal to my personal taste preferences...
If it's on a Frito chili pie: sharp cheddar
Bagels: toasted Asiago bagel with cream cheese
Ham sandwich: Swiss
Philly cheesesteak bowls: Provolone
Grilled chicken sandwich: Provolone
For a snack: pepperjack, string cheese, etc.
Pizza, stromboli, etc.: mozzarella, also Parmesan
For dishes like chile relleno: queso blanco
Salad: crumbled feta
With crackers: brie
On burgers: Muenster (Muenster is a fave)
