I think the middle eastern spices are like Dukkah.
Charoset is food meant to represent mortar in Passover, has cinnamon in it. Love smell of cinnamon, goes good with apple.
Nutmeg and Cumin also nice. Not every spice needs to be like hot chilli peppers.
