In Gen the disctinction between clean and unclean animals was about sacrificial atonement,
as was the proscription of eating blood.
It was not about diet.
Food laws weren't given until Leviticus, while sacrificial laws were given at the first sacrifice in Gen.

He prohibited the eating of blood (Ge 9:4) because it was not given for food at that time,
it was given only to make atonement.
